Joyful Chaos French Toast

Yesterday I decided to make French toast for breakfast for me and my household, with some bread1 I had baked the day before. My roommate had lots of great ideas for things that might be good to add, and I happily threw in everything they suggested. It came out absolutely delicious, so now I'm sharing it with you. Here's to friendship and spontaneity in the kitchen!
Ingredients:
- Six thick slices of bread
- Four eggs
- 1/4 cup coconut milk
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon orange extract
- Cinnamon
- Nutmeg
- Cardamom
- A pinch of salt
- Two bananas, sliced
- Coconut oil (enough to coat the bottom of the pan)
- Maple syrup, for drizzling
As per usual, I didn't measure the spices, but I'd estimate I used about a half a teaspoon of each.
Procedure:
In a large mixing bowl, beat the eggs together, then mix in the coconut milk, vanilla extract, orange extract, spices, and salt. Soak the bread slices in this egg mixture, making sure they're coated thoroughly. Heat the coconut oil in a large pan, and once it's hot, drop in the soaked bread slices. (Depending on the size of your pan, you'll probably need to cook them in a couple batches rather than all at once.) Place a few banana slices on top of each piece of bread. You may want to add a tiny bit more egg mixture onto the banana slices, to get them to adhere to the bread better. After the bread slices have been frying for a couple minutes, lift them up with a spatula to check their doneness. If they look fully cooked on the first side (golden-brown without any runny egg bits), flip them over to cook the second side; otherwise, wait a minute and check them again. After flipping them, press them down lightly with the spatula so that the banana slices stick in place. Cook the slices until the second side is also golden-brown, then serve them drizzled with maple syrup.
